Vegan Cauliflower Fried Rice

Cauliflower seems to be popping up everywhere these days and I for one am excited! I love cauliflower rice, cauliflower pizza crusts, cauliflower mashed potatoes….so many yummy treats! I’m not even gluten free! I love the chance to sneak in more vegetables any chance I get!


Not only is cauliflower a great lower calorie option but cauliflower contains vitamin C. Who needs oranges when you have this amazing veggie?? Also, cauliflower is known for its anti-inflammatory properties and can reduce the risk of heart disease and even cancer


I recently discovered my new go to cauliflower lunch: cauliflower fried rice!!! It is so quick and easy and I can make it ahead of time without the recipe getting funky or going bad. This week I cooked about a batch and it made about 3 lunches. It was a life savor! With this recipe you can use crumbled tofu with nutritional yeast or (my favorite) edamame! In addition to being an awesome source of protein, edamame is rich in fiber, antioxidants and vitamin K.

Here is my recipe for Vegan Cauliflower Rice:


1 bag of cauliflower rice (pre chopped)

1 cup of frozen edamame

1 cup of frozen vegetables (frozen peas, carrots and onions are the best in my opinion)

3 tablespoons of minced garlic

2 tablespoons of oil

1 tablespoon of ginger

1/4 cup of soy sauce

(optional salt and pepper)


1) Start by heating the oil in the pan on medium heat

2) Add the garlic and cook for 30 seconds, keep stirring so you don’t burn the garlic

3) Add the cauliflower rice, and frozen veggies

4) Sprinkle the ginger in the pan

5) Cook for about 5-7mins, make sure to stir the “fried rice” occasionally

6) Add soy sauce

7) Plate the “rice” and enjoy
