Avocado Asparagus Brown Rice and Quinoa Wraps! Yay for easy&yummy!
I came across this recipe in the recipe calendar app. I modified it to make it vegan and even easier to make. If you are a meat eater (which my husband is) you can add shrimp to the wrap for some extra protein.
This is an easy meal for food prep. All of the ingredients stay fresh for a week and you can pre cook everything and throw it together in 2 mins when you are starving!
The avocado is great. The healthy fat is satiating and keeps you feeling full for hours! Yummy!! The asparagus provides vitamin K, B1 Thiamine, is a good source of fiber and also helps fight cancer! Plus you get a healthy dose of anti-inflammatories from the brown rice! To top it all off Quinoa is one of the most protein-rich foods you can eat making this a complete meal!
1/4 cup boiled brown rice/quinoa mixture (I enjoy equal parts of rice and quinoa)
1/4 onion chopped
a handful of asparagus (ends chopped off)
1 tablespoon chopped garlic
1/2 tablespoon of olive oil
A dash of salt and pepper
Large Tortilla wrap
Start by steaming the asparagus for about 6 mins. While the asparagus is steaming begin to heat a pan and add oil. Add chopped onions and cook and medium/high heat for about 5mins. Add chopped garlic to the onions and cook for 1 min. Be mindful to constantly keep the garlic stirred so it does not burn. Take the pan off the heat.
Turn the oven to broil and warm the tortilla wrap briefly for 1-2mins. Mash the avocado and spread it onto the wrap.
Combine the remaining ingredients in the wrap. Add a dash of salt and pepper and enjoy!
